Charles Cimicky, along with his wife, Jennie, runs Cimicky Wines near Lyndoch at the entrance to the Barossa Valley. He is another advocate of rich, robust Barossa Shiraz. Cimicky farms 60 acres of estate vineyards, many planted in 1973 by his father, Karl, a Czechoslovakian immigrant. Cimicky is aiming his 15,000-case production mostly at reds, concentrating on Shiraz, Cabernet Sauvignon and Merlot. Charles Cimicky wines are renowned for their quality. This is due to their high quality grapes, their lavish use of French and American oak, and their state-of-the-art winemaking equipment. The winery was established in 1973, and was originally called Karlsburg Wines. The most immediately noticeable feature of the estate is the "fantasy" building created by Czech-born Karl Cimicky. The building sits within exquisitely maintained formal gardens with its castellation of spires and battlements stretching up towards the intense blue Australian sky. The winery is surrounded by 75 acres of vineyards. Cimicky strives to preserve the inherent fruit characters of the distinctive Barossa style. He strongly believes in the importance of viticulture and concentrates on organic methods as much as possible. Cimicky's motto is, "Good wine begins from the earth." The Cimicky low yielding vines are grown on deep black sandy loams that surround the homestead and winery. Some blocks are contoured and in early summer when foliage is light the property becomes one of the most strikingly attractive and memorable in the whole of the Barossa. Cimicky's style is to let the vines do the talking. This is achieved by keeping the vineyard in perfect health and irrigating only those blocks whose variety and level of maturity demands it. In the winery, modern crush and press equipment stand central to a literal bank of small fermentation vessels all lagged and hooked up to electronic measuring devices that flash out temperature readings and sound alerts when untoward changes occur. Adjacent is the barrel storage room full of French and American barriques all of which are less than three years old.
